Tombstone was founding in 1878 when silver was found in the area. There are many old pictures that were taken during those early years. We have old friends that visit our lodging near Tombstone. Angie and I recently had the opportunity to visit with Sharon. She gave us the opportunity to scan some old photos of Tombstone. She had taken these pictures when she was visiting back in August of 1952. I haven’t seen many pictures of Tombstone from that era. If someone took pictures of Tombstone during that time, few have survived from 60 years ago. A lot of the town was dilapidated and there were wide open spaces to explore. Boot Hill was just the grave yard without any buildings or shops nearby like today. Some places like the Crystal Palace Saloon were located on the main street of town and appear to have been open for business. Some of the buildings were in disrepair, such as the Courthouse. The OK corral was just a sign hanging in the area and it delineated information on the gunfight. Now there is a daily live reenactment that is held behind a fenced in set.  I have a few photographs from the 50s and also some recent photos so that you can compare the changes.

From Our Saint David B&B Explore Bisbee’s Wonders

45 minutes from our St. David B&B to a Bisbee Overlook. The quaint town is nestled in the Mule Mountains.

Only a 45 minute drive separates you from our Saint David B&B from the delights of Bisbee. Every now and then we have some spare time to go to a place that is fascinating and fun to explore. Bisbee has many small eclectic shops, a coffee roaster, tasting olive oil, balsamic vinegar or wine, the mine tours and museum, antique stores and some fantastic places to eat.

We particularly like to go into the antique stores to see if there is something that we can find that will fit into the decor of our Saint David B&B. It is always fun to explore this town that grew up around the mine and view the old buildings from street level or from atop one of the overlooks in the town. But the one thing we do like to do in Bisbee is to sample the culinary offerings of the restaurants.

Decorating our Saint David B and B

Christmas boxes at our Saint David B and B pictureEvery year we have decorated our Saint David B and B for Christmas. We start decorating a few days after Thanksgiving like most people, unlike some stores that start just after the 4th of July This project starts by hauling down boxes from the rafters in the garage and from shelves in the house. We thought we had placed everything in a location where we could have easy access to it. But the garage at our Saint David B and B seems to be living, breathing being and items over time have moved in front of the Christmas boxes. Some of the Christmas boxes move to other inaccessible locations. I have wondered how many other people have living garages like us.Hanging garland picture

After gathering all the Christmas storage boxes, we usually have 3 days of work ahead of us before we finish. I know we can cut the time frame down (it shouldn’t be that difficult). It is hard to understand how it takes you one day to pull everything down and put it away in marked boxes but it takes 3 days to put it up. This is a conundrum that will never be answered at anyone’s home let alone our Saint David B and B. Be that as it may, we do take our decorating seriously. Both the inside and outside get the holiday makeover but most of the work is inside. Before we start we have to move furniture and make sure the area is clean. I think that the dust hides in the boxes and just jumps out when we open them.

Southeastern Arizona B and B Offers Our Southwest Egg Bake Recipe

Being a Southeastern Arizona B and B, one of our breakfasts reflects the flavors of Southwestern cuisine. We provide a savory Southwestern dish with a spicy taste. This is one of our breakfasts when you stay at our Southeastern Arizona B and B. This meal is both tasty and allows flexibility for preparation. With minor modifications, we are able to make it vegetarian, gluten free, lactose free. When we have guests with dietary restrictions, we place the portions into 7 ounce ramekins. The portions will vary from the 8″ sized dish. After you have reapportioned the ingredients, the bake time changes to 50 minutes uncovered. This method allows us to modify the meal to the guests requirements and make the meal similar for everyone at the table. For lactose intolerant guests we substitute soy milk with some flour to thicken the mixture and we leave the cheese off. Omitting the chorizo makes the dish meatless. We can also substitute turkey sausage for the red meat in chorizo.

Wings Over Willcox

Wings Over Willcox 2014 is coming in January

Sand Hill Cranes returning pictureWings Over Willcox (WOW) is an annual event held in the middle of January every year. This year is the 21st time that the birding event has been held. The WOW event hosts various tours, seminars, contests and a banquet. There are over 60 different events taking place during the time frame. Birding tours and many chances for photography are available at different venues all over Cochise County. Twin Lakes, The Willcox Playa and White Water Draw are some of the locations that draw the birding tours. Children’s activities such as building bird nesting boxes are available. It is less than 2 months away from the start of WOW and already some of the more popular events are sold out with wait lists for them filling as you read this. Opportunities to get on a tour are still available but they are filling up fast. I notice that there is one contest with Wings Over Wilcox which would be interesting for me. The contest is the Anniversary Challenge. This challenge is open to everyone and its aim is for entrants to find and list as many of the 100 birds that were seen in the Sulphur Springs Valley prior to 1900. Some of the birds were sighted back in the 1700s.  The list can be found on the website challenge page. A bird themed poetry and a Haiku contest is also on the agenda.

Southeast Arizona Bird Migration along the San Pedro River reaches its peak in the fall and spring of the year. Some of the migratory birds end their southeast Arizona migration in areas of Cochise County in Southeastern Arizona. Down By The River B and B, the lodging hub of Cochise County, is a perfect spot to stay while you take your day trips to find that bird you need on your life list. There are many birds that spend the winter in Cochise County. The nice sunny days allow for you to spend time watching the birds instead of being bundled up next to a fire at the old homestead. In preparing this blog, I found a website that gives migration routes of birds and approximate times of the year that they migrate. There is some good information in this website and it gives you some general timing for your visit to see the our Southeast Arizona bird migration.

The Sandhill Cranes, Snow Geese, American Avocet, American Coots and a variety of Teals are just a few of the birds that spend the winter in locations around the county. There are lakes and ponds within a short driving distance that are sanctuaries for these birds. Besides the migratory birds that call Southeast Arizona home for the winter, we have the resident birds that live all year long in the area. Many visit our feeders during the day. This allows our guests to be very close so there is no need for that big lens to get that great picture.

Arizona Wine Tasting

The Arizona Wine Tasting – The Wine Challenge was held at Down By The River B and B

Arizona wine tasting was the name of the game at Down By The River B and B where the Wine Challenge at The River was held. The non-conventional Arizona wine tasting test was hoping to demonstrate that Arizona Wine could hold its own against other wines from outside of Arizona. Angie and I were convinced from our Arizona wine tasting ventures that the grapes grown and used for wine in Arizona were just as good if not better than other wines we have had. To find out we decided to have a blind taste test with our guests.

Wine set up for the Arizona Wine Tasting ChallengeAngie and I provided the Arizona wines that were chosen at the Willcox Wine Festival. From this Arizona Wine tasting we chose two wines that we rated the best. We also have our favorites from the Sonoita area and we did a comparison of those with the two that we had chosen from Willcox. Unlike official taste tests, we decided to allow the guest to bring any wine that they thought would be something that would be liked by all the other guests. The blind tasting guests turned their bottle over to Mike when they arrived. Mike transferred the wine to another bottle so that no one would visually know which wine they brought. The wine bottles were left opened and allowed to breathe for over 1 hour after the transfer to the new bottles. The bottles were labeled randomly for the tasting.

We had expected 3 rooms to be at the Challenge but one room had to cancel at the last minute. So instead of 8 different samples to have during the test we had 6. We had each guest rate the wines from 1 to 9 for nose, finish and overall drinkability. The scores would be averaged and the highest rated wine would win. We had two California wines, two from South Australia and two from Arizona. The wines were all good with the food pairings that we had during the tasting.

  1. 2010 Zarpara Origen, a blend from Kansas Settlement, Cochise County Arizona
  2. 2012 Molly Dooker Boxer Shiraz from McLaren Vale, South Australia
  3. 2012 Molly Dooker Violinist Verdelho from McLaren Vale, South Australia
  4. 2011 Chateau St. Jean Chardonnay from Kenwood, Sonoma County
  5. 2010 Arizona Stronghold Nacise, a blend from Cochise County, Arizona
  6. 2012 Educated Guess Cabernet Sauvignon from St. Helena, Napa Valley

We actually picked the Nacise as the wine to beat when we picked the wines at the Willcox Wine Festival although we felt that Origen was a close second. Since the winner was Origen, which was our wine pick, we awarded the prize to Alex Miller who brought the Molly Dooker. The prize was a bottle 2009 Gallifant Cabernet Sauvignon. The other guests also received free wine tastings that were contributed to us by Coronado Winery, Zarpara Winery and Pillsbury Winery.

As I said this was just a fun time and not a scientific or professional tasting. We also regret that we couldn’t pick a wine from all the wineries in Arizona but could only choose two. We do want to thank everyone that helped us choose a wine for our Arizona Wine Tasting event. Many of the vintners gave us advice on what they thought would be the best one to choose. We wish to thank Terry and Jacque with Coronado, Mark and Rhona with Zarpara and Bonnie Lee and Sam from Pillsbury for the tasting passes. We want to thank the winemakers and owners of Carlson Creek, Charron, Coronado, Dos Cabezas, Flying Leap, Golden Rule, Keeling Schaefer, Kief Joshua, Lightning Ridge, Lawrence Dunham, Page Springs, Pillsbury, Sand Reckoner, Wilhelm and especially Arizona Stronghold and Zarpara for guiding us with wine recommendations. Southeastern Arizona BnB Recipe

Spinach Tomato Quiche with Caramelized Onions from our Southeastern Arizona BnB Recipe Collection

Our delicious Southeastern Arizona BnB recipes come in handy when we have a diverse group of guests. Many times we have had guests who have dietary restrictions and we want to provide a great breakfast that will meet their requirements. Sometimes we need to do separate dishes for them while at other times we are able to accomplish the meal using one recipe. We recently served a breakfast where we had a guest who was on a gluten free diet, a vegetarian, a diabetic and a guest with no restrictions. The spinach quiche recipe is a staple on our menu list and this dish worked for everyone. We can use a crust that is gluten free or we can eliminate the crust in some cases. Even though the dish doesn’t call for meat or cheese, you can add bacon or Mozzarella to the recipe and it will become a different breakfast when served. This recipe is very versatile and allows you to experiment to meet the dietary restrictions of our guests.

At times we post recipes on our blog so that guests can find them later when they get home. All of our recipes are designed for larger groups but the recipe can be reduced for use in smaller size dishes and ramekins. The cooking time will vary so that variable needs to be watched. We serve this quiche with different side dishes including French toast, pancakes or waffles. We love to play with combinations. Ingredients

4 large eggs
3/4 of a medium onion
2 1/2 Roma Tomatoes
1 1/2cups fresh spinach leaves
3/4 cup heavy cream
3/4 Tbsp ground rosemary
3/4 tsp salt
3/4 tsp pepper
Butter
Pastry shell (optional)
1/4 cup Mozzarella Cheese (optional)
1/4 cup bacon cooked & crumpled (optional)

Directions
Grease an 8” baking dish and bake pastry shell. If you don’t use the crust just grease the dish.
Julienne Onion and sauté in butter over low heat until browned
Thinly slice the tomatoes deseed and set aside
In a bowl combine eggs, heavy cream and spices – Mix well
On the pie shell place the caramelized onion
Place the spinach over the top of the onion
Place bacon over the spinach (optional)
Pour the egg mixture over the top of the spinach and onions
Top with the tomato slices
Top the tomatoes with the Mozzarella Cheese (optional)

Bake at 350 F for 30 to 35 minutes until golden brown

Keep your camera ready so that you can take photos from a car during travel.

B&B San Pedro River birding photography requires good equipment, some skill and it also helps to have some luck if you want to have those close up pictures. I was a Boy Scout in my youth and one of the things you learned was the Scout motto. “Be Prepared”. The motto has proven true for me when I am taking photos around our San Pedro River B&B. The days I forget to take my camera with me are the days that I could have had a great photo.

But then there are days that something great happens and I get a B&B San Pedro River birding photo that is a keeper. In a blog I wrote a while ago I related the story about seeing a Northern Harrier gliding over the back of the property. This was usually when we were preparing breakfast for the guests and I never had the camera with me. Happily it ended one day when Angie told me a Northern Cardinal was in a mesquite tree behind the fence at the patio. I put my zoom lens on the camera and went out to get the picture of the cardinal. After the photos were taken, I saw the harrier gliding over the field again. The camera was ready and so was I. You do need that little bit of luck.

Sometimes you need to shoot a picture through a window. The shot isn’t going to be perfect but it can be made.

If I am going anywhere other than to the store, I make sure my camera goes with me. We went wine tasting in September with my son and his family. On the way to the winery we decided to show the grandkids Twin Lakes in Willcox. The area is known for waterfowl and as we were driving along a white bird came down and glided in front of the car for a while. I had the camera and as we were driving I was shooting pictures of the bird. Luck showed its face again. Although the shots were a little shaky because of the ride, I was able to take some nice flight shots. From the shots we could determine that the bird was a Northern Harrier.

Just a few days ago, I saw a bird that hadn’t been in the patio area before. Again the camera was handy and I put my zoom lens on the camera. I carefully walked out the door and headed out onto the patio slowly. I didn’t want to scare the bird off. From the patio I could see that the sun wasn’t right for a good shot. I moved to the right and finally worked my way to the access opening in the fence and set up for a shot behind the poles. As I looked around with the camera the bird posed for me and I got a great shot of the Cassin’s King Bird. After a few minutes of posing, he left but there were gold finches on the feeder. Since there was a particularly nice goldfinch on the feeder, I decided to take a couple of shots.

It is nice to have birds pose for you when you are trying to get a picture.

I was able to upload and process the digital film on the computer. While reviewing what I had photographed, I found that the photo of the Cassin’s King Bird included a Chipping Sparrow sitting on a nearby branch. I had concentrated on the king bird so much I hadn’t seen the sparrow. When I looked at the finch photo I found another surprise. The picture showed one bird leaving the feeder and another finch starting to hover as he was landing on the feeder. Now you know what the luck portion is in photography. Some things you can anticipate but others are happenstance. Pray that luck is smiling on you as you take B&B San Pedro River birding photos.
